This is a very simple pea and mint soup that fills you up and is so warming. Found that this will feed two people for 2-3 days
Ingredients:
- Half medium onion cut to choice
- one large clove of garlic or to taste
- 2-3gm butter
- 3/4ltr of veg stock
- one medium potato. I prefer the albert douglas ones but any medium baking spud will do
- Peas (obviously) about 1/3rd of a bag of frozen. I think the minimum size they sell in the UK is 1kg bags.
- fresh mint. dried will work though but it’s more intense
Method
Melt the butter in a saucepan and add the onions. run the onions initally over a high heat and reduce to low and let them simmer in the butter until soft and nearly clear. don’t worry if they brown a bit but don’t let them burn. Little side note – cooking anything with onions depends on how you cook them. Know your onions 😀
Chrush the garlic in and stir to mix. Another side note, garlic stops the cooking process for onions and can burn quickly. Alium vs Alium!
Add the potatoes (boil them, mash them, put them in a tew) and coat in the onions garlic and butter.
after a minute or so add the stock and then simmer until the spuds are soft.
Add the peas
wait a couple of minutes add the mint. If using fresh shred or bash it a bit to get the smell going.
After another minute or so take it off the heat and allow to sit. We’re not worring about over cooking the peas here.
After a few more minutes use a hand blender to make it into a consistent soup and serve. I let people add their own seasoning as everyone has different tastes. I prefer mine with pepper.
