Stewed berries and Ice Cream

This is something I wanted to try, a variation on a fruit compot. This is based on cooking for two so vary accordingly

Ingredients:

  • 2-3gm butter
  • half teaspoon of caster sugar
  • half a cinnamon stick
  • 4-5 medium plums
  • half a medium apple
  • juice of half a lemon
  • berries of choice – I used strawberries, rasberries, and raisins
  • 1/3rd of a bottle of red wine

Method:

Melt the butter over a low heat in a pan, I used a flat frying pan to distribute the heat.

When melted stir in the caster sugar and add the cinnamon.

Wait until the sugar has disolved into the butter, the medium to low heat is to avoid making fudge or toffee.

Add the plums, chopped to taste and with the stone removed.

When the plums are softening added the apple, chaopped to taste with the core removed.

Gently heat until the apple is soft.

Add some of the soft fruit. I used strawberries, rasberries, and raisins

allow to heat through

Turn up the heat and add the wine to reduce

When reduced a bit add the lemon juice, turn down the heat and and some somr of the berries.

At this point it’s a good idea to fish out the cinnamon and any lemon pips that got in

Cook slowly until soft, give it a mush if wanted.

Turn off the heat and allow to cool as no one likes a mouthful of hot sugar.

Server with some fresh berries and a decent blob of vanilla icrecream.
